Part 3 of the documentary series "The journey of food" focuses on the Byzantine period. Several members of the POMEDOR network, especially the historians Ilias Anagnostakis and Béatrice Caseau, contributed to it.

Scenes were shot at the Bocuse Institute during the preparation of the POMEDOR conference diner, where Sally Grainger, who designed the recipes with the input of Ilias Anagnostakis and Andrew Dalby, worked together with the chefs and a team of international students.

The French National Center for Scientific Research (CNRS) opens permanent researcher positions this year, including one which will be preferably attributed to a specialist in "Human diet of societies" ("Alimentation des sociétés").

NB: The section where this position is opened is mainly concerned with prehistoric and protohistoric societies (section 31), rather than with later (roman and medieval) ones.

Read the paper by Professor Johannes Koder entitled "Everyday food in the Middle Byzantine Period", which appeared in 2013 in the book "Flavours and Delights. Tastes and Pleasures of Ancient and Byzantine Cuisine" edited by Ilias Anagnostakis.

 

Within the rapidly expanding area of research on food and foodways, the medieval eastern Mediterranean is still very much an unexplored area. The aim of the POMEDOR project was to explore this new field in a multidisciplinary way and to stimulate further research. Although the project focused primarily on food and foodways approached through archaeological and archaeometric studies of pottery - from transport amphorae to serving dishes, through food processing utensils, cooking wares, and wares used in food production processes - the conference encompassed a wider field, including historical, archaeozoological, archaeobotanical and anthropological studies.

"Ce livre porte sur la culture alimentaire byzantine, sa constitution et la manière dont elle se différencie des cultures alimentaires juive, musulmane et chrétienne occidentale.
